Roasted Zucchini

My friend Melissa posted a picture of her lunch that looked amazing, so I decided to put my own spin on it!

Roasted Zucchini
2 zucchini
2 tbsp olive oil
Garlic powder
Red pepper flakes
Salt & pepper
Shredded Parmesan cheese 

Slice up zucchini. Place on a lined baking sheet sprayed with olive oil or nonstick spray. Spray again with olive oil on top. Sprinkle with garlic powder, red pepper flakes, and Parmesan. Bake at 400 until Parmesan starts to brown a bit and zucchini is cooked through. 

Top with your favorite pasta sauce or
Grandma's Tomato Sauce from Fixate Cookbook. 💚❤️💜
